The classic Buddha bowl – vegetarian and colourful

This timeless classic combines everything that makes a good bowl: a healthy, filling main ingredient, colourful vegetables and a creamy dressing.

Ingredients:

  • 60 g quinoa or rice
  • 1 handful of baby spinach
  • 1 small sweet potato, diced
  • 1 small carrot, diced
  • ¼ red cabbage, finely shredded
  • ½ avocado, sliced
  • 1 tbsp toasted sesame seeds
  • For the dressing: 2 tbsp tahini, 1 tbsp lemon juice, 1 tsp maple syrup or honey, a little water, a pinch of salt and pepper

Preparation: Cook the quinoa or rice according to the instructions on the packet, then leave to cool. Dice the sweet potato and roast it in the oven at 200 °C for 20 minutes. Meanwhile, chop the remaining vegetables and mix together the ingredients for the dressing. Arrange all the ingredients on a bed of rice or quinoa in a bowl, sprinkle with sesame seeds and garnish with the tahini dressing.

Tex-Mex bowl with vegan mince

Ingredients:

  • 60 g rice
  • 100 g vegan mince
  • Spices: cumin, chilli and paprika powder
  • 80 g sweetcorn
  • 80 g kidney beans
  • 1 handful of cherry tomatoes, halved
  • ½ avocado, sliced
  • 1 tbsp jalapeños
  • For the topping: (vegan) yoghurt, coriander and lime juice

Preparation: Cook the rice and leave it to cool. Fry the vegan mince in a little oil over a high heat and season to taste with the spices. Drain the sweetcorn and kidney beans and chop the remaining vegetables. To serve, arrange all the ingredients on top of the rice in a suitable bowl and finish with yoghurt, fresh coriander and lime juice.

High-protein Buddha bowl with tempeh and chickpeas

Ingredients:

  • 60 g bulgur
  • 100 g tempeh, sliced
  • 100 g chickpeas
  • 1 handful of broccoli florets, steamed
  • 1 handful of baby spinach
  • 1 carrot, cut into fine strips
  • 1 tbsp pumpkin seeds
  • For the marinade: 2 tbsp soya sauce, 1 tsp sesame oil, 1 tsp maple syrup and one clove of garlic

Preparation: Cook the bulgur and leave to cool. Cut the tempeh and fry in a little oil until golden brown. Then remove from the heat and pour the marinade over it. Chop the vegetables and steam the broccoli. Finally, arrange everything in a suitable bowl and garnish with the pumpkin seeds. Tip: The marinade also makes an excellent dressing.
