Rosenthal recently asked three questions to renowned local and international top chefs to find out what “casual fine dining” means to them, which ingredients they use for it, and on which plate from the new Rosenthal Sonetto collection they would like to serve their fine creations. “Let's Talk” was the theme for Marcel von Winckelmann, “Newcomer of the Year 2024", toque-winning "Female Chef of the Year 2024" Viktoria Fahringer, Simone Caponnetto, owner of the “50 Best” restaurant Locale in Florence, and Alessandro Riemer, Michelin-Listed Chef. They all share the idea of casual fine dining, where guests can enjoy outstanding dishes made with the finest ingredients in a relaxed atmosphere. At Sonetto, they appreciate the floral shapes, different heights and materials, and the combination of glossy porcelain and nature-inspired stoneware. What is your favorite item from the Sonetto collection?

A plate with a slightly raised form and a delicate gold rim, which elevates the entire dining experience with a subtle touch of elegance.

What would you serve on it and what may never be missing?

Veal sweetbread at the center, complemented by three dumplings of mushy peas with charcoal foam and ash, alongside a side tartlet topped with veal tartare and roasted peas. The vibrant green of the peas is indispensable, as it contrasts beautifully with the golden edge of the plate, creating harmony between food and design.

It means taking seemingly simple ingredients and giving them a unique twist that brings out an unexpected sense of elegance.

What is your favorite item from the Sonetto collection?

A beautiful plate from the Sonetto Oro collection with a golden flower in the center, slightly elevated in design. It not only stands out as a piece of art itself, but also provides each dish with its own small stage, perfectly framing the culinary creation.

What would you serve on it and what may never be missing?

Something meant to be enjoyed with a spoon: rich, slow-braised red wine mushrooms, creamy potato purée, pickled mustard seeds, and a drizzle of herb oil. What may never be missing is a pinch of love and fresh herbs like parsley or chervil fresh from the garden.

It is a balance of elegance, refinement, and playfulness. It is about giving the utmost care to ingredients—selecting them thoughtfully, treating them with respect—and at the same time creating an experience that is enjoyable and fun.

What is your favorite item from the Sonetto collection?

The Sonetto Oro plate that becomes a canvas, an essential stage on which the dish can fully express itself. The design elevates the presentation, ensuring that the culinary creation is truly brought to life and given value.

What would you serve on it and what may never be missing?

Fusilone pasta made from dried semola, cooked in garum, an ancient anchovy fermentation, served with four sauces—saffron, white herbs, squid ink, and red pepper essence—arranged like a colorful Pollock painting. The dish is completed with cuttlefish and a prawn–langoustine bisque, creating a vibrant composition.

It means uniting haute cuisine with a sense of lightness, creating refined dishes that leave guests with a smile.

What is your favorite item from the Sonetto collection?

It is the amuse-bouche bowl because of its unique balance of rusticity and sophisticated design. With its "broken porcelain" surface, it is a true eye-catcher on the table and provides the perfect stage for culinary greetings from the kitchen.

What would you serve on it and what may never be missing?

A creation layered with textures and flavors: a pea-based flexi-ganache as the foundation, topped with beef tartare, complemented by peach gel and yuzu gel for freshness and brightness. The dish is crowned with gin tonic caviar, and delicately garnished with red shiso cress, pea shoots, and blossoms from the own garden. One essential element must never be missing: beetroot, which embodies honesty, fruitiness, and acidity, and elevates the dish to a higher level.
